Los Jilberto's Taco Shop Borrego Springs
About This Spot
Stepping into Los Jilberto's Taco Shop in Borrego Springs feels like pausing for a genuine, unfussy moment amid the desert’s wide openness. This casual local eatery hums with the quiet energy of regulars and travelers alike, all drawn by the promise of a fresh, satisfying meal without fuss or pretense. The pace is unhurried but efficient, inviting you to settle in with a sense of ease before heading out to explore the colorful Anza-Borrego landscape.
The atmosphere here is straightforward and low-key, focused squarely on the food and the rhythms of day-to-day life in this small desert town. The modest interior and the well-worn counter suggest a place that values consistency over flair, where the welcoming staff work with quiet competence to serve up hearty, authentic Mexican flavors tailored to both early morning appetite and casual midday cravings.
At Los Jilberto's, the meal becomes a comforting ritual. The breakfast burritos and chilaquiles verdes gently coax the morning awake, while carne asada plates and tacos al pastor offer a satisfying close to a day spent under the sun. A modest salsa bar provides a touch of playfulness—add a splash here, a dollop there—letting guests customize each bite. This is not a place to dazzle with trend-driven dishes but to enjoy the reliable warmth of food that feels rooted and real.
The locals and visitors who come through leave with a sense of having found a dependable spot where the flavors are well-loved and the portions generous. There’s an understated joy in the simple act of sharing a plate of machaca with corn tortillas or savoring fish tacos fresh enough to recall coastal breezes. It’s the kind of place where the slight hum of conversation blends with the clatter of dishes, creating a quietly familiar soundtrack for a meal that hits just the right notes.
Los Jilberto's Taco Shop is a small but steady beacon for anyone seeking an authentic, unvarnished taste of Mexican comfort food in the heart of Borrego Springs. Here, food is a humble invitation to relax, refuel, and carry a little desert spirit with you as you step back into the open air.

Just fresh, good tacos and salsa. Not taking plastic is a flex in 2026 and judging by the line, hungry people were not deterred.

This is a standard taco shop with good food and no atmosphere but perfect for a quick meal or take out. I've ordered here several times and the food has been exactly as expected with reaonable prices for the area. Service is not friendly or particularly fast but it is competent and better than some sit down restaurants in town.

The Fish Tacos with Rice and Beans was the best I have ever had and the nice lady at the counter was very polite and professional. I will diffidently go back there soon. I do not think that the fish taco plate is be topped by another choice. One of the other guest recommend the hard or soft beef taco plate. And yet another frequent guest told me laster that the Al Pastor Plate was their preferred item.

The Anza-Borrego Desert is an awesome place. But, before one heads out to check you the blooming cactus it’s important to have good breakfast. Los Jilbertos Taco Shop has an awesome choices. The carne asada burrito and the carnitas was delicious. This a good place to get great meals. Everything we order was perfect . We had many requests due to food restrictions and the staff was fantastic in modifying some of our orders. I am grateful to all the staff at the shop they were patient and kind. Next time you find your self in the area be sure to stop in at Los Jilbertos Taco Shop.

Had excellent food here! Had the machaca platter which came with rice, beans and 4 corn tortillas. Your choice of either corn or flour. They have a small salsa bar with pico de gallo, red sauce, green sauce and pickled carrots. The price was reasonable and the food plentiful! Everything was delicious! I can see why there was a line waiting to order. Food came out fast and hot. Definitely one of the top Mexican food places I've eaten! They are cash only

Solid Mexican food in Borrego. Good salsa bar. California burrito was good, wish it had sour cream and more fries. But otherwise tasty. Breakfast burrito was great, too. Family business.

Awesome street tacos. I thought they were a bit expensive until I received my order. These things are packed full of meat. Super tasty and authentic, highly recommend. Things to know about this place: cash only and no restroom.
